Paper Dosa is exactly what it sounds like — a dosa spread paper-thin and crisped until shatteringly crunchy. Often served three feet long for the photo, this is South Indian theatre and South Indian technique all in one.
The same fermented rice and urad dal batter as our masala dosa, but spread thinner and crisped longer. A drizzle of ghee gives it a gorgeous golden colour and a buttery aroma. We pair it with sambar, coconut chutney, and a fiery tomato chutney.
