Podi (literally 'powder') is the secret weapon of South Indian home cooks. We roast urad dal, chana dal, sesame seeds, and red chillies, then grind them with salt to a coarse, deeply aromatic dust. Mini idlis get a generous bath of ghee on a hot pan and then a heavy dusting of podi until every surface is coated.
The result is bite-sized, golden, ghee-glossed idlis carrying a wallop of flavour. Naturally vegetarian and gluten-free — and easily our most popular South Indian snack in Surrey.
